After over a decade of witnessing rapid modern shifts while living abroad, Nidhi recognized a critical gap: the risk of future generations losing touch with their rich regional roots, particularly traditional nutrition and culture. Driven by a mission to preserve and elevate the heritage of Uttarakhand, she returned from the United States to commit herself fully to grassroots cultural and culinary preservation.
Nidhi dedicated months to extensive field research on native Himalayan grains, which led her to collaborate with Mr. Subhash Raturi, the pioneer behind the Manduwa King initiative in Dehradun. Under his guidance, she deepened her execution strategy for millet-based culinary models. Merging her institutional governance background with this specialized research, she established Himalayan Samoon in Dehradun.
Named after the traditional Garhwali word for a love-filled cultural gift, Himalayan Samoon reflects Nidhi's vision of presenting the ultimate token of the hills - Pahadi food, attire, and traditions - to the modern world. By re-engineering standard fast food using organic finger millets (Manduwa) and barnyard millets (Jhangora), the cafe directly counters the unhealthy stigma of quick-service dining, making nutrition the first choice for today's health-conscious youth.
Beyond the plate, her business model builds a sustainable supply chain that gives back to mountain farmers who continue to cultivate these ancient grains in remote high-altitude terrains.
Nidhi's work operates in perfect synergy with her husband, Shri Sachidanand Semwal, an enterprise AI Architect based in the USA who leads the landmark Bhasha AI initiative to integrate Garhwali, Kumaoni, and Jaunsari languages into global computing frameworks. Together, their combined ecosystem creates a powerful, unified front for the preservation of Uttarakhand's language, culture, and sustainable agriculture.
